I am so hungry for a pizza but do not want to mess up.  Is there a low carb cheese that I could try out for a pizza?

Kefir cheese is super easy to make.

1. Make kefir.
2. After kefir is made let sit at room temperature for days until curds separate.
3. Line colander with cheese cloth and pour kefir on top.
4. Let sit for 1-3 hours.
5. Add salt and enjoy :)

swiss is supposed to be one of the lowest carb cheeses, cheese is pretty low carb in general. When I used to crave pizza but didn't want to gain weight, I would get a couple slices of white pizza with some meat toppings than put some garlic salt and eat it with a fork and knife leaving all the dough behind. You get over pizza eventually, it took me a few years to lose interest in it. When I realized it was giving me asthma and heartburn I was really done with it.
My basic health philosophy:

1. If it is advertized on TV, don't touch it.
2. If it is recommended in the news, do the opposite.
3. If it makes most people afraid, it might be good for you.

If you have to cheat because you are a newbie, go and cheat.
Get back on your RPD adventure afterwards.

Although from my point of view these days, pizza is so vile... it is a crime against health... but some people need to cheat at times to fulfill something...

When I eat cheese I choose raw cheese such as Brie or Blue Cheese... and I do not think about carbs in cheese... why should carbs be an issue with cheese?

Have you heard of nutritional yeast? 

It is a single-celled organism that is grown on molasses.  It has a ton of nutrition like folic acid, vitamin b, selenium, zinc and proteins.  It is also gluten-free, low fat, zero sugar and no preservatives.  I usually get my at Whole Foods in the bulk section but you can also order online at Amazon or maybe find it in the natural foods section of your grocery store. 

Since the nutritional yeast comes as a powder or flakes you can easily sprinkle it on your pizza.  There are a lot of other ways to use it too like kale chips, roasted vegetables, etc.

I think it is a great nutritional alternative to yeast and paleo friendly!
