Storing Meat in a S.A.D. Fridge
« on: February 26, 2012, 09:12:52 am »
Hey all,

I'm going to be interning on an organic vegetable farm CSA (community supported agriculture) and will be eating raw paleo while living there. I was wondering if anyone had any recommendations on how best to store my meat in a fridge of (likely) all cooked diet foods shared by six people. I was considering asking if I could have my own mini-fridge, but otherwise I was thinking Pyrex jars or mason jars. ( http://www.pyrexware.com/index.asp?pageId=14 )

Does anyone have any better ideas or experience in the like?

I am a confirmed mason-jar-a-holic. I tried treatment but then I discovered wide mouth jars and that was it.

Don't cover them unless you have to.
Cheers
Al

Raw meat stores best where it can breath and stay dry. That is why you always see the high-end meat in a butcher case uncovered. Dry ageing makes it more tender.  A closed container will cause it to get slimy and turn green. Wrap it in a cloth and put it in a paper bag if your companions don't want to see it.
Naturally, Don
