Basically, the evidence above shows that when one removes the cooked animal fat so that the result is "low-fat", the resulting number of AGEs, a type of heat-created toxin, are much reduced. Just look at the figures for cottage cheese, 1% fat and compare them to feta or american, processed cheese, for example.
