does it say that everything is flash boiled, or was that pertaining to one thing?

I understood it to be just the third stomach they do that with, but they did sear other things like the Niku Uni (which sounds out of this world!).

almost everything at takahashi is served raw with the option to cook as much as you want with the grill at the table. Everything is reccomended raw though.
