Title: Raw Steaks Served in Philippine Restaurant: Smith Butcher and Grill Room

A specialty steak restaurant opened a few months ago in Makati City and of course I had to try their steaks from around the world.

I ordered a sampler platter of raw steaks.  From Japan, France, USA and Australia.

The French raw steak was hands down the best.  No wonder, it was the grass fed one.

I should have included the Irish steak that was also grass fed.  I did not know from the menu that I could choose.  Maybe next time I will choose an all grass fed option.

The head chef went to my table and asked if I really wanted everything absolutely raw... just to confirm... I told him yes!

Also on this picture top right is raw bone marrow.  And raw goose liver.

Local Philippine bone marrow. Familiar good taste.

A very enlightened Restaurant!

I used to get my meals served raw in certain restaurants I regularly frequented, but doubt if I could come to such an arrangement in UK now - perhaps in Scotland where I was served the best completely raw meat, poultry and fish on a three times daily basis in Peterhead?

Nice, which one in the picture is the grassfed one?

And, I'm assuming they're all frozen, right? Because of the shipping distances...

The small round lump on top is the French grass fed one.

They have a specialty freezer that does some aging and maintenance of their raw steaks.
