Does anyone have a clever stratrgy for getting past the skull of the animal to its brain? What tools do you use?

I am right now looking at fish but in the future perhaps larger game

I just chisel out a round circle at the top of the skull and scoop out the brains with a spoon.

For larger animals like deer and sheep, I've had good luck using a hatched head to split the skull starting from the nose. This allows me to extract the brain whole if the split goes well. But Derek's method is probably easier.

On larger harder headed Rams with Horns, I have split the skull from underneath, and scoped out the brains through the sinus cavity area.
