I hang my beef in the refrigerator.
I buy good enough for 2-3 days.

Freezer and take out meat as I eat it so that I keep a steady flow of thawed out meat available.

I buy for a fortnight(=2 weeks), then I store what can't fit in the fridge in the freezer, some uncovered, some vacuum-packed as farmers often sell meat that way. Generally speaking, I store the marrow in the freezer and not usually much else. The suet is so dry that I've in the past been able to leave it outside the fridge with nary a smell or any real decomposition(just a bit of green/brown fungus-like growth on the surface).

Raw eggs I leave outside.

Hanging meat is ideal.  Using a Stainless wire rack also works.  I get my meat in vac. sealed bags, so they keep for at least a month just fine in the fridge.  I always rinse and scrub under warm water to get plastic residue off of meat.  Eggs, like Tyler, I keep on the counter unrefridgerated.
