Title: Best Red Meat

What is the healthiest kind of red meat? Does it really make a difference overall for health benefits, say like Beef vs bison vs lamb, etc. ?

I think beef & buffalo might have similar micro nutrition. I would go with beef because more fatty cuts are available. Where buffalo are mostly prized for being low fat by super markets. At least in my area. Check out this site if you want to do your own comparison http://www.nutritiondata.com/ (http://www.nutritiondata.com/). Personally it doesn't' matter what kind of meat I eat. As long as the source(meat) follows my contrived hierarchy list.

so fattier beef is healthier than lean bison ( if both are grass fed organic)?

yes, The majority of us(rawpaleoforum) would agree that raw animal fat is primary for good health. Some might argue that grass-fed isn't much more beneficial than conventional. Or that Organic isn't all that. Personally I buy grass fed for ethical reasons. I feel that it mimics the animals natural state of being,despite it being farmed for slaughter. Of course when available, I always go by my list.
The word healthy has different meanings to everyone. I don't want to just tell you what to eat. You might want to research & conclude for yourself. Some topics of concern that might help your research (fat-soluble vitamins, omega 6:3 ratio,carnivore diet,insulin resistance,saturated fats & cholesterol myths. etc.)
