Title: Raw Sausage or Bratwurst?

Is it good to consume either raw sausage or bratwurst? Especially if they are without preservatives?

It's good if you like the taste.

If I found a good source of seasoned (herbs only, maybe dash of onion/garlic) raw sausage, bratwurst and blood sausage, I would probably never eat anything else again

I've been making sausages myself, mostly just filled the guts with peaces of meat or ground meat and hung them up to dry. Tastes alright, great for travelling. I don't think there's such a thing as raw blood sausage.

Ground seasoned meat soaked in blood, then wrapped in casings?

I've never seen it or made sausage myself like you have, but I would assume it's possible, no?

No idea... I would try, but the only blood I have access too is from conventionally raised pigs, and it is frozen too... yuk. What I meant is that there is most likely none available commercially anywhere.
