does anyone know why the colors/textures are different.. and what do they mean?I've got variably like that between the two sources of grass-finished meats I've purchased locally. The darker stuff is from the vendor I buy from now and is aged for 21 days before packaging versus fresh for the other.

I've also noticed the same between grass-finished and grain-finished; grain-finished is much redder/brighter and has a different texture.
