Title: NAMEKO shroooms
Post by: yuli on September 21, 2010, 04:29:58 pm
Just finished preparing marinated Nameko mushrooms...
These are so intoxicating, taste and smell-wise, the marinade shroom soup will make an awesome sauce for raw beef and other meats!
I just have to let them sit for a while now and let the flavors mix (Note to self, next time no salt is needed - these guys produce their own  ???)

What is in the sauce?

shoom water, olive oil (but you can use any oil that agrees with you), himalayan salt (not really needed), allspice, cumin, sliced garlic, green onions chopped thin, some lime juice

Try this with Shiitake or Portabella mushrooms instead.
The Namekos become have such a strong taste in their raw form its a little too much!  :'(
I did this before with Shiitake and it was much better.

I am now using these mushrooms to flavor my bone broth (I make the bone broth from the leftover marrow bones out of which I scooped out the marrow), which works pretty well.
But yeah, I suggest blander mushrooms then Namekos :P
