One-week-old horse meat is a fresh meat for me. I'd rather eat 3-week-old one as it's a huge delicacy. When it gets older it becomes more of the delicacy. 8)

Do you have a separate place where you keep the aged meat or do you keep it in your house?
I cant keep it for more than a week in the fridge because of the smell.

It depends on the kind of meat. Horse meat is unique, as it can be aged in the refridgerator for couple of weeks without using any airtight jars - its smell isn't intimidating for my parents, with whom I still live. It's different with male mutton - it has become very pungent for my parents only after couple of days! Now I keep it in the airtight jars on the balcony. ;)

Horse meat is one of the best meats.
My top 3 are wild reindeer, grassfed lamb and horse. Reindeer is the best but lamb and horse is a tight battle for me.
