Instructions?
Do you air it out like high meat?
Do you refrigerate? or not?
What is you room temperature nowadays? How warm is your warm place? Is it air tight?

My recipe is simple - let the Nature to that in the right way :) I keep it open to air without any lid over the jar. I placed it near the heater (a little one) over a cupboard in the kitchen - the temperature is about 26-28 degrees C. Maybe next time I'll will try to ferment the fat in an airtight jar. I realized that horse fat is perfect fat to to it, as the breakdown is quite simple. More unsaturated fatty acids? I don't imagine to obtain the same results with the kidney lamb fat. That would be IMO impossible - too much SUFA; different structure.

that's awesome! i wonder if wild hog fat would do a similar thing. it's pretty unsaturated. or maybe just beef hide fat... i wanna try this out

The smell is pleasent. The same is with the aged horse meat - the smell, even after couple of weeks isn't intimidating The jar with the fat stays open on the cupboard in the kitchen; my parents don't grumble about this. ;)

i think trees with a dusting of snow and/or iced look so pretty! as much as i am such a wimp for the colder temps, i do love the freshness of the crisp air and the winter landscape.
okay then, how fun!, i would even brave the cold ;)
