What do you guys think causes my saliva to go funny/foamy/coagulate sometimes eating tongue?
Tongues my fave cut but not a fan of this so much!

i do not know, but maybe there are certain things left in the raw tongue that produce saliva and mixes with the enzymes in yours???? just a crazy uneducated guess....

Theres some gel like stuff all over the tongue maybe this is the cause,

I think it's just saliva left inside tubes and on the tongue. I have that every time I thaw my tongues. I think it's pretty disgusting so I rinse it off first.

 There's something about swapping spit with a dead ruminant that doesn't jibe with me. :P

Hmm...yeah it isn't my cuppa tea either...people let their dogs lick their mouths don't they? strange.

I ate tongue just then, I washed it and only chewed it a few times. I've had a problems with the foaminess lately...it's mostly in my head now because tongue is my favorite cut. None to report tonight.

I decided to look it up because it was bugging me. I found a little bit of info about washing Ox tongue.

"Wash the ox tongue and soak it in brine for 7 to 10 days and then in water for about 12 hours.  Many traditional butchers will do this for you"

"Thaw and wash the ox tongue. Wash in vinegar to remove the sliminess. Rinse."

"Rub tongue with salt to remove slime"

So yeah, maybe my tongue is not washed. I'm pretty happy just to rinse it under the tap.
