Title: Marrow Question

I'm going to order some marrow bones from a local farmer and I was wondering: Do you have to make bone broth to get to the marrow or is it exposed just to be scooped/scraped out?

I buy my raw marrow in c.6-inch-long chunks, I make sure to request that they are broken up into such small segments. Then I use forst an oyster-knofe to punch out the harder marrow on the surface, followed by using a normal knife and pushing it in and circling it around to get the rest of the raw marrow out - no need for making bone broth.
