How long will beef bone marrow stay fresh in the fridge and keep in the freezer?

You mean, how long will it stay tasty?

2-4 weeks I'd say.. in the fridge.. Freezer.. months.

How long will it stay edible

I start to notice a rancid smell after a few days of sitting in the fridge after thawing. Same thing with other types of raw fat.

I have been buying about a 3 months supply of marrow bones at a time and keeping it in the freezer with no degradation. For the past few weeks I have been taking out about 6  pieces of 2" femur bone at a time and leaving it at room temp. After a week out there are no off odors, colors or rancidity. I scoop out some marrow now and then. This is from a grass fed animal. Once again, it is paramount that the meat or bones be on a rack so to have good air circulation. The surface needs to stay dry. Spoilage organisms need moisture to multiply.  The interior is protected by the animals natural cellular antibiotics if not destroyed by cooking.

Thanks for the replies thus far. Also, I have another question.

Sometimes I get little red strings that feel almost like hard thread in the marrow. Did I accidentally shave the bone while scraping for marrow? Or what is that?

I always find tiny bits of bone in my raw marrow, can't be helped, I just spit them out. As for the "red" in raw marrow, that's caused by blood, I think?
