Title: Raw tongue WTF!

Okay y'all. I just bought frozen grass fed cow tongue at the farmers market today. Holy cow! literally. Okay. Help me out here. That tongue is so tough and huge. My guess is I'm supposed to just cut it into tiny pieces and down it. Right? It's wicked intense. Hard almost sharp. I'm all about it. Since I need to get fat in my diet. The woman's bringing me tallow (whatever the heck that is) and back fat, which she figures is the raw hide stuff I had asked her about, tomorrow. She's looking for marrow for me but think she's out. Bummer since I think that's more up my alley. So back to the tongue. Any suggestions or personal experiences on how y'all have eaten it. Thanks. Anne

Tallow is rendered(heated) suet so shouldn't be eaten. Get raw suet, instead.
Newbies generally don't like eating the tip of the tongue and the darker, purplier, stringier bits of the lower half of the tongue. Just cut out the pinker, slab-like parts into small enough chunks. Over time, you'll get used to and enjoy all parts of the tongue.

I like to chop up the tongue into small pieces, including the tip and back. Then I leave it outside the refrigerator until it gets slightly "high" then eat it. For me it chews a lot easier that way plus I find the flavor of slightly high tongue better than fresh.
