Title: Raw honey
Post by: SoulJourner on May 18, 2011, 04:15:17 am
Can anyone recall the temperature above which AV says honey cannot be heaten? Gibson's Golden honey claims their honey sits in a heated jacket before going to the bottling pump. They claim it doesn't go above body temp.

Exactly 92.8 degrees F.
The temperature of a hive cannot reach higher than this temperature. On hot days bees fan the honey using their wings to keep the honey cool. Honey products labeled "raw" can sometimes be heated to 160 degrees F. Be sure to buy honey labeled "unheated".

Thanks! I'm amazed that you know this to this level of specificity - how did you learn this?

Haha, I just happened to have Aajonus' book on hand; I checked it out from the library and it was sitting next to me when I read your post.
