what is oxtail like? Is is similar to bone marrow? i'm asking because a new butcher says he can get it for me.

It's more similar to pig's feet, except meatier. It's kind of like beef shanks (shins) or extra-fatty and bony beef chops.

I just tried some oxtail. It's okay/good if you really like to gnaw. The fat is greasy - neither flaky nor grisly. The meat is fatty in a good way, but not much of it. The bone structure is hard to eat around. I wouldn't go out of my way to get more - I'd leave it for the coyotes.

Yup, that's why it's typically used in stews and soups, to make it easier to eat, but that's not kosher here, of course.

Tyler, have you ever tried to eat oxtail raw?

I don't think I've ever had it raw or cooked.
