Title: collard greens

Hey I had some collard greens this morning, but just the leaves.  are the stems edible as well???  is there any reason I shouldn't eat them?

Goitrogens and oxalates and indigestible hard fiber. I wouldn't touch cruciferous vegetables with a 5-foot pole.

Some people handle that stuff better than others, techydude.  I personally do have issues when I eat a lot of veggies, but some people do all right with them.

Awesomeame--you'll just have to try them to see how your body likes them.  Yes, the stems can be eaten.

ok I'll give them a go.  I juice all my veg, so I'm not concerned with fiber/hardness :P  This is the first time trying collardgreens...bought them on a whim since i've never seen them before....I don't often eat cruciferous veg because of what techydude mentioned

Awesome - just in case you don't know the words that Techy used - if you have thyroid or kidney disease or a propensity towards kidney stones they aren't good in high quantities generally for folks with those conditions.

There is a homeopathic, board certified opthamologist (whose name escapes me) who recommends collard greens (amongst other things) for eye health.
