Title: black spheres in fat

I was eating some fat and came across some soft black spheres in the middle of it. They were all separate and I ate around them but im wondering if anyone knows what that was.

It was beef bottom sirloin fat I think. Definitly bottom fat of some sort. Iv been eating around the spheres with no problem. Just curious what they are.

It could be small concentrations of blood. Sometimes tiny capillaries or pockets of blood are left in the meat, they appear dark red or black.
Alternatively, since the spheres were in the fat portion it could be dried/oxidized fat as a result of exposure. If it smells strong or unusual then it is best avoided.
