Title: Bison meat too lean?

I have been getting grass fed bison lately, because it is the only meat I can find fresh. I really like the taste and the fact that its fresh! However, I read on the Archevore blog that grass fed bison is very lean; even more so than wild game (?!). Does anyone know if this is true, or how it compares to grassfed beef for leannness? And how much extra fat would I need to eat to make up for its leanness? I do eat about 1/2 cup (not packed down) of bone marrow/butter/coconut oil/and/or/suet per day...is that enough extra? Is it so lean its not worth bothering with?

Unless it is a rib-eye or similar cut I can't tell any difference whatsoever how fat the meat is from any animal.

I emailed Mary at NorthStar and she said that brisket and chuck roasts would be the fattiest, and also rib eye steak (but thats a little out of my price range I think...). So for my next order I'm going to try those roasts!

Brisket is excellent, and very fatty.

Oooo yes! Sounds good!!Too bad I missed ordering some for this next Thurs. delivery :-( At least I have 5lbs of marrow bones coming too...;-)
