Title: Cooked vs Raw fats

I understand how protein gets denatured and enzymes are changed in meat protein, but what is the difference between cooked and raw fats?

In the same way that chemical changes (denaturing) happens to protein when it's heated, chemical changes happen to fats also. The higher temperature and longer heating period used, the greater the changes.

Cooking oxidises the fats, making them toxic.

If there's anything you don't want to eat cooked Poly - it's fat. Cooked fat seems to be the worst for me over any other cooked food.

for me cooked carbs are definitely the worst.

I find that there is a big difference in how my body reacts to different cooking processes.  Fried food would never sit well.  High heated oils, heavy grilled fats, etc.  I think there is a difference between that and roasted or slow-cooked fats.  Things like in bone-broth, crock-pot meals, things like that.  These seem to sit the best with me.  Oh, also things like roasted nuts are not good for me either but some fresh raw nut butter is a nice treat sometimes =)

Ah - you see Joe - I think it all depends on what kind of foods the body can digest the easiest to begin with. Bone broth makes me deathly ill - but I can eat pan fried vegetables just fine. I don't feel as good as when they are raw - but my body likes lots of vegetable matter in general.

So good point. It's probably individual.
