Title: raw sausage?

does anyone here eat raw sausage links? just wondering... it sounds sooooo good to me right now. im just worried about the casings i guess. the rest is just ground pork and spices im assuming. anyways, this pastured pork farm sells sausage now and im wondering it's a good idea to eat those raw. anyone have experience with this?

I'm not completely sure, but I think sausage is generally cooked before selling.

I'd thought that sausages are precooked or at least filled with chemicals etc.

In the meat stalls of the wet markets, sausages are made from those unsold parts of animals.  Those unsaleable parts are the unpopular parts... they aren't fresh because these were the ones unsold.  And then they put flavors, seasonings, preservatives in them.  The casing is traditionally from the intestines.

Might want to check if the raw material, the animal was pasture fed.

the pork sausage i would be buying is pastured, but i guess i need to look into whether or not it has preservatives and what the casing is made of.
