No I do not eat beef suet.  It is not commonly sold in our markets.

Pork suet we turn into cooking oil for our maids who like frying.  My wife and kids use ghee for frying.

Using teeth.  Add to meat or just by itself.  3-4 ounces at a time.

Right now I'm doing 2.5 oz suet with 5 oz beef per meal. Though I usually do beef fat, not suet. I don't really enjoy the waxy, chalky texture of suet. But beef fat is great (soft, chewy, buttery).

It naturally comes with meat in the wild, so it makes sense to eat it with (organ) meat. Eat both fat and meat until satiated.

Inger has a nice video around where she wraps her meat around the suet. I usually lay them on top of one another.

IF for some reason I feel I need more fat and the suet is too dry (some pieces are actually moist and buttery I'm starting to find) I'll measure out about 1/2 teaspoon of honey, and dip it in that. The sweetness really gets my salivary glands going and helps moisten the dry fat. Plus it tastes amazing.
