Title: Scooping out bone marrow...
Post by: Raw Rob on January 15, 2009, 10:37:45 am
What do you all use to get the bone marrow out? I bought some beef femurs today. I used a knife, but I got some bone shards mixed up in the marrow. I'm thinking I should use something duller. This is my first time eating marrow.

I use a slim metallic spoon, something like an ear cleaner. I have the bones sawn / cut / chopped open at the wet market.

if they bone is cut short enough (less than 3 or 4 inches) i can usually push the marrow out as one whole piece with my thumb. if it's longer, i just use a butter knife to scrape it out.

You need to get yourself something like this:

As you can see, marrow has been popular for a very long time and considered so important that you have a special spoon for it.

I get the Slanker's marrow bones and can sometimes push it out without a utensil, and when it's not cut in a way that I can I usually just smash them in half with a sledge hammer and then pull it out that way.

When the marrow is redish-white, soft and creamy , I just use a knife and scour round in a circle to get the marrow out. If the marrow is of the dry. stark-white, type, then I have to use a tough oyster-knife to punch through the top-layers of marrow, before I start using a normal knife to scour the marrow out in the usual way.
