Title: Kombucha

How do you feel about kombucha on the instincto diet?

Kombucha is typically made as a processed food (tea and sugar are boiled prior to fermentation) with processed ingredients (cane sugar), so if you are aiming for unprocessed foods as a basis of instinctotherapie, kombucha would not fit the bill. I'm sure there are other angles, though, such as using honey, but I don't think there is any way around boiling the ingredients to brew the tea and avoid contaminating the scoby.

I brew green tea, and gently warm raw honey. Then add a scoby called jun. It has a unique taste and my aunt loves to drink it all!
