Why do they make it with skim milk and not whole? is there any reason to this?

You could ask the same question about any brand of kefir in the US. Consumer demand shifted to "fat free" many decades ago. Dairies gladly complied, considering that they can get more money for milk cream and the products made from it.

Kefir is singularly simple to make at home from kefir grains.

BTW, Organic Pastures in my area does not raise their cows on a 100% grass-fed diet. They told me that 100% grass-fed is not feasible.

I wouldn't generalize from one area to another. I think it's better to contact the source rather than rely on the information that someone else was given. Learn to ask the important questions.
