Title: An idea for my future.
Post by: Dwight on August 21, 2010, 06:20:30 am
Would it be a good idea to take up a Japanese food class, learn how to prepare sashimi (yes i do not know how to, i just chow down on the whole thing) then open up a restaurant serving all raw meats?  ???

there is nothing special about sashimi, all it is is frozen raw fish cut into thin slices , there is nothing more to it.
sashimi is no different than raw frozen fish.
it has been said that Japanese started to consume sashimi very recently when refrigeration became widespread about 100 years ago.

Go for it!!!

Sashimi is an art form.
There is an art in how to cut the fish.
How it is cut makes it more flavorful.
The art in presentation is fantastic.
There is a refrigeration technique to it, how many days, at what temperature, with vinegar or none...
Go for it!!!

Starting restaurants is a risky business as most of them go bust within a couple of years. One has to make sure there is a sufficient clientele interested in such unusual fare, and that there are no other sashimi/sushi restaurants in the neighbourhood etc.
