I will be ordering from http://www.northstarbison.com/ for the first time.

Before I shop, I need to know what cuts are the most tender and have minimal connective tissue (digestive system is very sensitive). Suggestions are appreciated.

Do you get backfat? Where else do you get meat?

Have you ever thought about just grinding up all your meat with a meat grinder?

I get meat locally, and I get bison backfat when it's available, but on some of the orders I've made (only 3), i was told there is no bison backfat available. But maybe you'll get some if you ask.

I ordered from here yesterday. I've never ordered animal products through the internet before, so this will be an interesting experience. 12 pounds of bison suet, 4 pounds of liver, and assorted organs.

Suet - $4.50/lb
Liver - $6.99/lb
Pancreas - $4.95 each
Thymus - $5.95 each
Spleen - $10.95 each

You can order up to 75 pounds and shipping only costs $15.95. Seemed pretty reasonable to me.
