Title: How to preserve a whole animal?

Well lets say I got a whole animal a sheep which I Butchered my self and skinned now I want to preserve its organs and meats in such a manner that I can eat it raw should I put it in the refrigerator on plates without covering the meat so it wont spoil with bad bacteria?

I want to buy whole animals every month and preserve them for a whole month so I can eat it for the whole month of course.

anybody doing something like that, my biggest fear is that the meat will spoil  -\ perhaps it will get high and full of good bacteria if I wont cover it ?

Maybe I should hang in the refrigerator? or ground it all like lex dose and put into boxes for daily portions ?
Whats the best method?

Edit: Can I eat the kidneys raw without cleaning them with warm water some told me they might have bad stuff in them? anybody?

And I am afraid of eating the liver of the sheep in huge portions because I read that it has too much vitamins in it and can be toxic .

    I think cold water or raw milk would be better to clean them.  Warm water may make it taste too much like urine.  Think!  Paleo times how many people had warm water every time they butchered?  I like fermented highmeat kidneys.  That takes the hard to deal with stuff away too and it comes out tasting salty somehow and works so much better (food as medicine).

if you have $200 to spare, bill mollisons books of human fermentation has preservation methods from various cultures and covers most things that comprise an animal

Honestly, just do it. You'll learn a ton in the process. There are several factors you won't be able to account for.

You don't need Mollison's text (unless you'd like to have it , of course)

What I do:

Hang up an animal from a tree, slit it's throat and bleed it out. Skin it; gut it; and separate all the insides (GI tract from other organs). Then, I butchered the meat and put it all in a big food safe plastic bag (I work at a co-op and we get bulk food in all sorts of containers and bags and I just salvaged a few large ones). The organ meats were small so I placed them in one Tupperware container. Both of these fit inside my fridge. I tied several food safe strings to each quarter (front leg, ribs, etc.) and hang them outside at night now that it is cooler. During the day they stay in the fridge in the event the temperature suddenly rises.

You do not need to wash anything. I even dropped a few cuts of meat into the dirt and just wiped them clean specifically because I didn't want to wash them with water that could have chlorine or other contaminants in it.

If you have never processed an animal, I would worry about that more than worrying about how to store the animal.

If you have never processed an animal, I would worry about that more than worrying about how to store the animal.

my grandpa does the processing for me he separates everything perfectly we even take the intestines and make sausages from it to cook we fill the intestines with ground meat and onions spices and stuff

what animals you usually buy, zeno? Btw when you slit it's throat you can collect that blood and drink it right? You don't want to throw nutrients away !

Yes, drink all the blood you can harvest. Just have a large bowl or such on hand.
