Title: Where can I find good raw meat? HEB perhaps?

Hey guys, I'm a newbie here looking for some info on the raw carnivore diet. I had my first taste of raw beef at my favorite Korean restaurant, and I've been hooked ever since. I almost never eat cooked red meat now because it makes my stomach hurt and gives me other problems. Where is a good place to get good raw meat in Austin Tx, and what are some good meats to try aside from beef? My main concern is with the possibility of food poisoning; I'm very, and I mean VERY prone to sickness/ infection. Last time I got a sniffle, I found myself waking up in the hospital after lung surgery just three weeks later ( yeah I had pneumonia that bad). I'm also a brain cancer survivor, and was told by my neurologist that a ketone diet would be very good for healing and preventing seizures. Any pointers would be awesome!!

various probiotics including high meat seeding the gut.
I noticed if my gut is full of probiotics its a pretty good defense.

Slanker's sells prefrozen meat in Texas, you can get it mail-order.  If you want unfrozen meat, it's possible that Whole Foods has it.  Meanwhile, I actually mainly eat just fish for my flesh foods.  You can probably get some decent seafood in Austin.

Austin is a mecca for good grassfed beef.  Just do a simple good search, hook up with local paleo/primal or WAPF buying groups, go to you local farmers market, search EatWild.com.

Cool. Thanks guys! So I'll definitely be keeping kimchi on the menu ; I can't think of a better probiotic! I kinda figured whole foods would be the place to go. Does anyone have any experience eating raw chicken or pork? If so, what are some good recipes?

Just go in for raw, pastured chicken or raw, pastured pork. If either are fed mostly or wholly on grains, avoid them like the plague. Most long-termers avoid recipes and just eat the foods raw and on their own. I would suggest simply looking at online recipes for the cooked versions thereof and then substituting raw versions thereof. So, for example substituting raw apple cider vinegar for "vinegar", substituting raw sea salt  for ordinary salt, or exchanging processed olive oil for genuine, cold-pressed olive-oil(though Iguana has evidence indicating that even that is heat-treated).

There's almost no such thing as good-quality chicken and pork in the US.  Maybe 0.001% of all chicken and pork is equal to grassfed beef, in terms of the quality of the animal's feed.   However, if you can find the right farmer,  raw pork and chicken can be good-quality.  You pretty much have to visit the farm to find out.

dont get frozen unless you have no other choice.

whole foods will always have fresh grassfed beef of reasonable quality.

im sure trendy austin has a whole foods on every block so that should be your last resort if anything.

Cool! Well I went ahead and asked the butcher at HEB if he had anything I could eat raw, and he pointed me to some super prime tenderloin. I was already making steaks for the family, so I bought an extra one and made some steak tartare. They didn't have any anchovies so I went with some regular old sardines. The resulting dish wasn't fantastic, and I probably will not be making it again. :/ I think next time I'm just going to make some yook hoi and have some kimchi on the side. That prime beef was absolutely delicious on its own tho. I'll give whole foods beef a try too, and there's a really good fish market here, so I will definitely be shopping there. By the way, yook hoi is a korean recipe made with all raw ingredients. You just add green onions, garlic, a little sugar, sesame oil, sesame seeds, and either salt or fish sauce. It's super good and I'd eat it breakfast lunch and diner if I could!  :D

i wouldnt waste money on getting the expensive cuts like tenderloin unless I had plenty of money. Any grass fed animals muscle meat will be 100% safe to eat regardless of which cut. The cut will make no difference.

trust me, seriously....if its grass fed and its muscle meat you are literally taking no risk, nothing can happen to you....unless the meat was stored in plastic for long enough that it has a funny smell.

if it didnt touch plastic you have literally nothing to worry about, raw grass fed beef is probably the safest food ever. stop worrying about it so much you really are wasting your time with that.

Irrelevant whether the meat touches plastic, imo, but svrn is right in that the cut of  raw meat is irrelevant. That is, just choose the cheapest cuts of raw meat and you will be fine(perhaps not ground raw meat, though?).

This comes as a shock. Svrn actually getting it right for once!?!?!?

I would certainly advise against storing meat in plastic outside of a freezer. This is due to the risk of botulism and growth of other possibly harmful anaerobes if the plastic packaging is air-tight. Another reason to be concerned about plastic are the substances in it that can leach in to the food, such as BPA and phthalates, which are endocrine disruptors. In the freezer these risks are minimal, because bacterial growth and leaching occur much slower at freezing temperatures.
