Hi,

this is really important. Does anyone know of a source which depicts the nutritional content of pemmican right down to vitamin?mineral content?

the closest thing would be jerky (minus sodium).

The above contains maltrodextrin so is pretty artificial. Still, it's the best there is online as the usda nutrient database has nothing on pemmican at all.
