General Discussion / How bad is the "less than 2% of..." non paleo stuff on labels?

Often times when I read the label, something seems mostly alright, say sausages, but then the label will say something like
ingredients: less than 2% nitrates, sugar, dextrose, etc (not necessarily those exact things but you know what i mean). Could such a small amount make a difference to someone on a pure diet?
