You can also use raw hamburger to make a really cheap version of steak tar-tare. I ate a piece of my jerky a few minutes after I put it in the dehydrator and it was pretty darn good even though it was still cold.

Some folks just jump right in but I would take it slow and see how it goes.  Slow and steady has always been my motto. If you get yourself sick from not being used to it you probably will become discouraged and not want to do it. Give yourself time to build up your gut flora. Especially if you are sickly.

Most everyone here believes in grass fed, wild, cage free, etc. But I simply can't afford to eat that way and don't live anywhere near any small farms that might sell at a discount. I'm sure grass fed is better but I think it is greatly over exaggerated.

It's really going to depend on who you ask and most folks here will probably disagree with me for eating whatever I can find that's on sale. I bought six dozen eggs for under six dollars today. Cage free would have cost me over 30 dollars. Hamburger jerky is my newest favorite food. I absolutely love it! I just make it from whatever goes on sale and buy a ton of it and put it in my freezer. I don't think you have to freeze meat before eating it raw but it makes me feel better doing it though I just started a batch of hamburger jerky from meat I bought today that's never been frozen.

Raw meat tastes surprisingly good to me but I like it a hundred times better when it's made with spices and raw sea salt. I never liked plain meat when it was cooked either. I also like it with some sort of acid like lemon juice or raw vinegar. Even when it was cooked I had to have some sort of steak sauce, hot sauce or ketchup on it so it's probably just a personal preference.

This is all just my personal opinion. Also if you go out of your way to make your food more colorful and appetizing you will do much better on a raw food or any other type of diet. You will also save a lot of money and be able to use healthy ingredients learning to cook and not buying prepared foods or eating out in restaurants.

Omnivorous Raw Paleo Diet / Re: Shiitake Mushrooms
« on: June 16, 2017, 01:27:23 am »
I've eaten regular fresh mushrooms form the supermarket many times raw on salads and never had a problem with them. It could be just that I ate too many. I've read shiitakes can do that to you. I just froze mine as a precaution. Freezing wont kill the spores of the mushrooms, (they can even survive being in outer space,) but according to Weston Price Foundation it kills parasites. Cooking does kill the spores though along with bacteria and virtually everything else!

I've given up all dairy for years now but when I cooked my steak I always fried in in coconut oil. Funny. I had coconut oil on my list because I am running low but haven't used it since I went totally raw.

My skin is better since I gave up dairy. Raw milk is not an option for me because it's too expensive and I'd have to travel over a hundred miles to get it but if it were available here I would give raw dairy a try and see how it agrees with me.

Interesting. I just looked up the Latin name for vernal alfalfa and it is

medicago sativa

Who knew?

I just got through looking for vernal alfalfa seed and they don't even sell it on ebay or Amazon.  Last time I bought it from a seed company the seeds were coated with some kind of yellow stuff and I wound up throwing them away so I'm afraid to order any from seed companies anymore. Besides that most of them only sell vernal alfalfa in the early spring or fall and it's too late. Also it's not commonly planted anymore by the farmers because other hybrids that grow more efficiently have taken it's place.

I guess vernal alfalfa is on it's way to becoming extinct like many of the real paleo foods have. It's getting really hard to find. It's a shame because there was nothing like it. It is truly a magical food though not as magical as those mushrooms I suppose...

Primal Diet / I suppose tea isn't really raw either.
« on: June 15, 2017, 12:11:28 am »
When I stopped drinking coffee the main reason I didn't switch to drinking tea was that it was made from boiling water and I didn't feel like it was raw. I suppose sun tea would be the exception. Maybe I might try that one of these days but for now I'm satisfied with juicing...

Primal Diet / Is distilled water raw or not?
« on: June 15, 2017, 12:04:27 am »
I was just wondering if distilled water was technically permitted on a raw food diet or not. I suppose it's more of a philosophical question than a scientific one.

I drink reverse osmosis water so I suppose it doesn't really concern me. I used to add minerals back into it but started forgetting. I think it's because I been eating a lot of salt and don't need them anymore.

I just checked again with my infrared thermometer and at the 104 degree setting, the actual meat temperature is down to 89 degrees.  I think it fluctuates a bit when the thermostat clicks on and off and at times may be a bit higher.

Don't tell anybody ( It's a secret.) but ground beef jerky is really raw pemmican. The only difference is you don't render the fat so it wont keep as long because the fat will go rancid but that's ok because pemmican is made with cooked fat while ground beef jerky is a totally raw food!

It's a good thing I started right out making 3 pounds because I'm already down to 2 pounds and it's nowhere near dried. To be honest I don't know if it's going to dry at all because of the high 27% fat content of the hamburger I used. I like fat but to be honest it's even a little rich for me. I will keep making it that way till I use up all the fatty hamburger in my freezer but next time the leaner stuff goes on sale I intend to buy a ton of it.

I set my dehydrator for 110 degrees F. before I went to bed and when I checked it with the infrared thermometer this morning it was a steady 102 degrees from the top to the bottom tray so I turned it down and intend on finishing the drying at the lowest 104 degree setting.

My recipe was pretty simple. I defrosted the beef and mixed in salt, pepper, cayenne, oregano, cilantro, lots of cumin and a few glugs of vinegar and mixed it with my hands and pressed it out to make really small thin patties.

Some of the beef was still frozen. Rather than wait I sliced it in my food processor. It came out paper thin and I just sprinkled salt and pepper on the slices after I laid them out on my dehydrator trays.

The part I mixed everything in with my hands like the video I posted tastes a lot better. The paper thin slices are drying a bit faster but actually they have re moistened a bit because I moved them to the top and are picking up moisture from the lower ones. There's only a few left so they'll most likely be eaten long before they get a chance to dry.

I don't know what's in that guys spices and cure but I've read that normally salt and citric acid is used as the cure. I'm using celtic sea salt and raw vinegar as my cure but I think I might try substituting the vinegar for lemon juice next time!

I'm not going to post my recipe till it's done but as a primer here is someone's youtube video on making hamburger jerky.

If you're a health conscious raw paleo you won't want to follow this guy's recipe at all but I think there's some valuable tricks in there that definitely make it worth watching!

Health / Re: Help buying a dehydrator :)
« on: June 14, 2017, 07:56:37 am »
I spiced up some hamburger and put it in the dehydrator about an hour ago. One thing I noticed was that the temperature is running low. I could feel it with my hand and there is no way it is operating at 104 degrees.

I put  a thermometer inside and I have another hand held infrared gun style and both of them are reading barely over room temperature.

I think what is happening is that the temperature set on the machine is of the air that is coming out of it and not the temperature of the actual food which is much lower. The thermostat must be located in the bottom of the machine because everything else is clear plastic.  My plan is to keep turning the temperature up every hour till it reaches around 100 F. degrees and try to maintain that temperature no matter what the temperature on my machine says. It probably doesn't help that I went and put 3 pounds of ground beef in there. I also adjusted the trays so that there is maximum space between them for more air circulation.

I guess this is only a minor inconvenience to me but could be a potential disaster for anyone that doesn't have a thermometer.

My Westinghouse rectangular dehydrator just came. Compared to the round one I had before it's HUGE. It looks well made and seems like a really good dehydrator for the money. I spent a lot more for my old round one but probably paid extra buying it at the store instead of on the internet.

I've got some fatty hamburger defrosting in my sink and I'm going to make some hamburger jerky as soon as it defrosts. Will post the results in the recipe section!

Myth #3: Freezing Kills Bacteria

Freezing foods renders bacteria inactive but doesn't actually kill anything. That means if your food went into the freezer contaminated, once thawed it will still harbor the same harmful bacteria

Display Your Culinary Creations / Whipped egg whites are nasty
« on: June 14, 2017, 06:11:17 am »
I've been making Ingred's berry and whipped egg yolks every day since I discovered it. Sometimes twice a day Yum!

I been throwing away the egg whites. Yesterday I decided to try whipping them up. They looked so good when I made them but read on...

I began by whipping up 6 egg whites on low, then medium and then high speed for a couple of minutes.

Next I added a pinch of salt, a tablespoon of honey and the juice of 4 key limes, all slowly while whipping them on high.

Boy did they whip up. Filled a one quart sauce pan all the way to the top!

They looked so good but when I tasted them I didn't like them at all. Maybe they would have been ok if I had added a ton of sugar to them but that would have defeated the purpose of a raw healthy snack. They ruined my grapes that I had in whipped yolk. I added half of them and it was still way too much. It over powered them and filled me up to where I could only eat half. Had to throw the rest away this morning. Every other day I was able to easily finish off six yolks and some kind of fruit but this actually gave me a stomach ache.

Try it at your own risk. I suppose some people will actually like that kind of thing but not me! I guess when they make key lime pie they bake it in the oven. It's hard to believe something that looked so good tasted so terrible and was so hard on my stomach.

Raw egg yolks yum!

Raw egg whites yuk!

Primal Diet / Re: colon cleans/ dark circles

Interesting thread. My whole family has had dark circles under their eyes and up till about 10 or 15 years ago so did I. I'm not really sure what I did to get rid of them. It was long before I started eating raw food. Maybe it is somewhat hereditary but becomes worse with bad diet.

I live about a hundred miles from death valley. There isn't much to hunt here except an occasional coyote and rabbits. The best way to find them would be to wait till dark and drive to town really fast hoping to hit one with the car. I am always having to slow down for them and swerve out of the way. I could probably get quite a few of them if I were to change my strategy.

Health / Re: How do you get over your addiction to cooked food?
« on: June 13, 2017, 06:09:10 am »
Wow today is already the 12th. I been eating over 99% raw still and even gave up coffee. It's getting easier and it's hard to believe I am coming up on a week already. It seems like it's only been a couple of days.  I thought I was really going to miss cooked nuts. Looking back I used to eat a lot of them. I don't eat near as many raw ones. I used to think of all nuts as being healthy but now I realize that smoke house almonds, roasted pecans and cashews fall into the potato chip category.

I am still eating the same amount of vegetables raw as I used to eat but find myself eating a lot more fruit. I thought the carbs would be fattening but instead I seem to have lost three pounds, which is good because my weight plateaued before after loosing nearly 30 pounds in the last year and a half on a half raw diet.

I've really acquired a taste for raw beef. Though I like it with some sort of lemon juice or raw vinegar. I'm thinking that maybe that will change after my dehydrator arrives and I start making beef jerky.

Health / Bid Sniping.
« on: June 12, 2017, 11:03:42 pm »
Have you heard of bid sniping? Basically you place your highest bit in advance and the service bids in the lowest increments automatically in the last few seconds of the auction till you win or reach your maximum bid. You don't even have to be online at the time you bid. It's great for slow computers because the sniping company uses their own computer to place your bid and theirs are really fast!

I use www.auctionsniper.com

You get three free snipes when you try it out and it's 25 cents per snipe or 1% which ever is least after that. You only pay for the snipe if you win and it lets you do bid groups which is kind of advanced but it will let you place several bids into a group and automatically stops sniping once you've won one item or however many you tell it to in the group.

Bid sniping has saved me a lot of time and frustration plus a ton of money!

Display Your Culinary Creations / Re: Rocky Mountain Oysters
« on: June 12, 2017, 10:41:17 pm »
I'm not for sure but I don't think cows have oysters. Only bulls! Is that right?

Yes I let them thaw in the bowl. I been doing that with all my meat dishes. I take the raw meat right out of the freezer and run it through the food processor. Semi frozen works the best. If it's too frozen it cuts it up into fine chips. I like raw meat with some sort of acid. Usually either vinegar or lemon juice but in the case of rocky mountain oysters I like them with hot sauce which is the only cooked thing I've been eating lately. I am open to trying them with cayenne and vinegar instead but I'm not concerned with the little bit of cooked vinegar that's in the hot sauce. Eating raw is not a religion with me though maybe some day I might be interested in going total raw instead of 99%.
