I compared egg yolks of two brands in a store on my Instagram story. The more expensive 5 dollar pasture raised eggs had a lighter yolk than Yuppie Hill local eggs.

Man I loved that video. Thank you for sharing! I have a pretty good brand here with dark yolks. But Not as dark as the darkest one in the video. I would love to visit Japan!

I might frequent my journal here. My older age has led me back to doing Shaolin Kung Fu again and eating a lot cleaner. I always ate somewhat healthy throughout the years. But been pretty close to raw paleo the past 2 weeks. I am very curious what other people have learned on here and I am pretty excited to do some digging.

Hope all has been well with the old friends!

There was a coat of under-skin fat which I didn't eat because it was hard and not tasty. Also I don't eat the fat if i'm not 100 % sure the meat is completely alright.

I don't know what Jell-o is, we don't have it in Europe, but the meat was fine and tasty after one - two weeks hung in my fridge with a fan.

Thanks Mark & Saber for the encouragement.

Well, I thought I will post my results from the "dry-aging" here in my journal.  I tried some pieces of it today (it had been aging for about 4-5 days uncovered in the fridge and became hard and darker in color). It tasted like cardboard or nothing basically.  So, I am kind of disappointed.  I posted on another thread here about whether I had aged it correctly or not, so I guess I have to educate myself on how to do it properly.

If I would age it longer, I believe it would get even drier and chewier and have a bit more concentrated flavor, but not much.  And maybe it depends on which muscle part of the animal it comes from.  Before I put in the fridge, I had tried some of it raw and it tasted pretty bland to me.  That is a problem for me is that raw meat kind of tastes bland.  I want something stronger or more sour.  So, that's why I was trying to age it.

I do live in Argentina. Buenos Aires.

I usually have no problems with supermarket meat, but I'm fully aware that it's grain finished.

Is the fat in the beef you eat tasty, yellow, soft and buttery? Or is it white, like a paste and tasteless? And does it vary by cut?

Is the meat soft and jell-o like, or more structured and harder to chew?

Does the meat have a lot of taste and smell if fresh? Or is it like chewing tasteless jell-o?

Do you live in Argentina?

I started about a month ago to eat the Uruguayan beef that is sometimes found in supermarkets here. As far as i can tell, it's excellent and it hasn't caused me any troubles.
