fruitarian weight/muscle

We know most people who do vegan and fruitarian eventually end up with protein dificency. But not all seem to, here http://www.vitamin-junkie.de/blackman.html seems to not.

I'm just curious how some individuals can follow that type of diet and still not be skinny for many years, hats everyone's opinion on this.
