I would love to get in the head of die-hard vegans and see how they rationalize holding on to such an extreme dietary ideal. I cannot fathom it.

Well, it's obvious, not killing animals or eating animals killed by others is a powerful assertion of caring for the lives of others. Plants and fruits do not have the same power, despite them being in many ways as complex as animals.

At least these people are being honest. I am sure there are many others who carry on being  100% vegan until death, without ever admitting to health-problems.

The emotional reactions of intense sadness, empathy and feeling like some great injustice is being done at the sight or thought of an animal being hunted or slaughtered for food; is a mental disease / psychological disorder. From this stems vegetarianism.

Veganism is even worse, feeling the same things also at the sight or thought of a cow being milked, a bird's egg being taken, or even at extracting honey from a bee hive.

I would postulate however, that if you have one of these mental diseases, it's best if you abstain from consuming said foods until you're able to solve the issue. So it's not vegetarianism or veganism that is the mental disease, but the emotional reactions that lead you to believe that it's wrong to use animals for food.
We now live in a world where medicine destroys health, law destroys justice, education destroys knowledge, government destroys order, the press destroys information, religion destroys morals, and banking destroys the economy
