It is generally better, but some variety can be useful or interesting, and for some, red meat is too nutrient dense.

I would wonder how much of the benefits of ruminants over other species has to do with the former being fed their natural diet and kept in their natural environment during at least a portion of their lives, in most of the world.

Ruminants are, after all, the best at converting foliage to meat, out of the large animals that roam this Earth. They are also easier to herd, manage and butcher. A match made in heaven.
