Advice regarding Horse Meat wanted

I was encouraged by this article from a local newspaper:

I think I will soon be able to find a source for horse meat.

I need your advice / recommendations which parts of the horse are very good, fatty, lean, delicious or whatever.

Look for marble meat from old pastured horse. Awesome!

No idea. I tried to get raw horse organs and could only get raw muscle-meat of various kinds. I'm never concerned about what type of raw muscle-meat I buy, as they all seem the same to me, so I usually just buy the cheapest version.

I found horse meat in the nearby city of Malabon.
170 pesos per kilo.
Nice yellow fat like the beef.
Got leg part, got ribs and bones, got yellow fat, got heart.

Tasted a bite raw.  Pretty good.

We went to a carinderia / canteen and bought some cooked horse meat, adobo and tapa.  My driver said it tasted really great.  

Of course I think the cooked meat tasted blah.

Later, will wait for some hunger and eat a fair share of raw horse for review.

There were 2 stalls selling horse.

The lady said the horse meat arrives at 4am.

The horses are slaughtered in the afternoon in the town of Obando.

So maybe I will have to go to Obando and see the conditions of the horses there.

I offered horse meat to my brother but he passed on it.  He has no info about it.

I checked wikipedia and it shows horse meat is a staple human food forever so long.

I got some 6 kilos with me.  I bet me and the kids finish it all fast.

I think the "horse meat is lean" mantra is false.
I saw large amounts of yellow belly fat in the meat stall.
The butcher apportions it according to how much the buyer wants.
Fat Sold at the same price as the lean.

But did you taste the fat? Is it waxy and gross like suet or is it buttery and melty?
Take everyones advice with a grain of salt. Try things out for your self and then make up your mind.

Fat sold at same price for the horse is the same practice they do with beef.

I just had dinner.  Raw horse of course.
Fat was buttery and melty. (definitely lots more tender than beef, )
Meat was tender and delicate. (lots more tender than beef)

The children seared some horse meat flavored with vinegar and garlic aka "tapa".  They ate a lot.

I'm hooked.  This horse is up there at the same level as beef.  

I like this horse more than goat (too lean, small animal, boney, expensive),
more than lamb (smell and taste a notch below beef),
more than chicken (slimy),
more than carabao (slimy, lean)

The great comedian Dolphy is a regular buyer of horse meat in this market.

Janet Street-Porter: Horsemeat is safe, healthy - and tasty

I've long thought that most animal rights protesters are probably less equipped in the intelligence department than the creatures they so vociferously seek to protect, and events of the past few days have certainly proved me correct.

A month or so ago, I started researching a story for the latest series of Gordon Ramsay's F Word, on the merits of eating horsemeat. We're not talking about old nags destined for the knackers' yard, animals who have outlived their usefulness at the local riding stables, retired racing fillies or even unwanted pets. My report - broadcast last Tuesday - focused on horses which have been bred to be eaten, fed an organic diet, and slaughtered using methods which conform to strict EU guidelines. According to French animal welfare charities, there is no evidence of a single case of a horse being mistreated during the slaughtering process.

In France, horse is the only red meat which has increased in popularity recently, and the government has relaxed the regulations which meant it had to be sold in specialist butchers. Now it can be sold in supermarkets, and sales have soared. Horsemeat is 50 per cent leaner than beef, high in protein and 10 times richer in Omega-3. Gram for gram it is richer in iron than spinach, high in B12, rich in zinc, and very low in saturated fat. It is frequently prescribed by doctors in France and Italy for anaemic patients. Horses are far pickier eaters than cows, and those bred for the table are generally eating an additive-free diet, making their meat far safer for the consumer.

When I gave samples of barbecued horsemeat to members of the British public to taste (in Cheltenham and on the F Word film set in London), a huge majority liked it, and said they didn't have a problem eating it. But when news of this experiment filtered out to the press, the Daily Mail ran a feature which contained the following preposterous statement: "As long as they [horses] have names and personalities, they're not going to make it on to our dinner plates this side of the Channel, thanks very much."

And Marcus Wareing, one of Gordon's former protégées, was quoted as saying "it's unthinkable". But wouldn't you rather eat a meat that is clearly so much healthier, that contains no secret ingredients, and is guaranteed free from BSE? Or would you prefer to eat mystery meat in burgers and pies which comes from many different countries?

Waffling on about Black Beauty is to miss the point. When it comes to intelligence tests, it's been regularly proved that horses are no smarter than chickens. Peta (People for the ethical treatment of animals) have said that filming a balanced report about the benefits of horsemeat "reeks of desperation" and the RSPCA claimed they would have "significant concerns" if horsemeat for consumption in the UK was imported from the Continent.

On the day the film was broadcast, animal rights protesters dumped a ton of horse manure outside Mr Ramsay's restaurant at Claridges in London. They should be far more concerned about the 5,000 or so horses that are exported from the UK to the Continent to be slaughtered for human consumption. It cannot be best practice to move any animal this distance before being killed, no matter how humanely.

And if you or I want to eat horsemeat, then it's our choice. Peta supporters just hate all meat eaters, and my experiment proves conclusively we British aren't nearly as squeamish about horse as they imagine.

I changed my diet, I changed my coach and when I really think about it – I changed everything. From my girlfriend to my training and diet. Before I ate a lot of vegetables that are healthy but contained little energy. Now I mainly eat horse meat, rice and protein shakes. I got rid of my old coach who was in charge of my fight strategies. It simply wasn't working. I just started to think about what I had to do to become a better fighter.

For me horse meat is very tasty. It is different from beef, veal, lamb, mutton, etc. It's unique, because it can age one month and its smell is mild.
Do you blame vultures for the carcass they eat?

Beautiful, yummy creatures.  My kids and my wife's entire family instantly liked horse whether seared or fully cooked.

Children Eating Horse Steak Seared / Rare

Our children just love horse steaks rare. This morning we drove to Malabon to buy some 8 kilos of horse meat with horse fat and horse innards. We have to try them all. This is only our 2nd time to buy horse meat in the Malabon main wet market. We bought too much horse meat we actually broke our Styrofoam container. We had to buy 2 Styrofoam containers.

This time I bought from a 3rd butcher stall. We have to try different butchers to know. This stall is the bigger stall. They have more horse stuff here. I bought 1,500 pesos worth of horse this morning. They were nice the owner gave me some horse liver to try out. Tasted the raw horse liver on the spot, not bad. They had semi tenderloin, had it in 1 inch steaks. This is what the kids ate for a very late lunch at 3pm. Of course I ate fully raw horse meat steaks with no utensils this time. Horse meat tenderloin needs only bare teeth.

I took pictures of the 3 horse butcher stalls in the Malabon wet market. Look at those ribs, horse ribs. Look at the yellow belly fat. Seems I can only eat a little raw horse belly fat. Unlike raw beef back fat which I can consume in quite a good amount.

I also took pictures and a video of the children eating horse steaks seared / rare. I hope you paleo dieters are envious of these wonderful freshly killed horse steaks that have never been refrigerated. The kids loved these steaks so much they had the same horse steaks again at 7pm dinner time.

I'm not envious of these horse steaks, because I've got access to them. What I'm envious of is that yellow horse fat - that would be really a delicacy. :)

Horse meat (raw) was what I was eating before beef; it was way TOO SWEET AND LEAN! Horses don't have much fat; I ate lambs suet/muscle fat/marrow with it.

Why can't you eat much of the fat - they can't have very much! I can get horse marrow.

Horse meat has too much carbs in it. Whale meat is what I go for in Japan or beef. I dont eat grass fed beef anymore as it doesnt have enough fat in it. Feedlot is a lot more fatty. You can still get some organic feedlot if you look for it and pay for it.

Goodsamaritan, nothing personal, but why on earth do you let your kids eat cooked horse meat! Why not give it to them raw! Cooked meat is very, very toxic!! Its full of hetrocyclic amines and benzopyrenes.

Where do you see any carbs? There could be some, but rather below 1%, perhaps several permils.

Kids need to get used to raw land animals.
1 inch thick steaks.
20 secs per side.
Good compromise, they get to learn to get used to raw eventually.
Just like most of us here, we didn't go raw 100% in an instant.
Raw fish they have no problem with.

I asked the butcher.
They do not usually sell horse bone marrow in the market.
One butcher said that the horse marrow is not solid like beef, said the horse marrow was liquid.  And that the only one that buys the horse marrow was a healer.

A healer?  Hmm.... horse marrow is medicinal?  Sounds good.

I may be able to get horse marrow on special order.

How is your horse marrow?  Solid or fluid?  How does it compare to beef bone marrow?

As raw meat man (new member? I just read some posts and didn't like them - too extreme; I like people to keep their feet on the ground) said; horse meat is very sweet - not even lambs fat could kill that!

Horse bone marrow is quite liquid - very special to eat. It is used for medicine and in cosmetics.

Ok, I understand.
I like sweet taste, so it definitely doesn't bother me. Besides it's very mild; honey, dates are very sweet, but I like them :)

Horse bone marrow is quite liquid - very special to eat. It is used for medicine and in cosmetics.

    Maybe that's why it's called cherry blossom; because cherries are sweet.  I wonder why it would be sweet.  Something to do with horses' metabolisms?

    How can it be used as a cosmetic?
