How do you dry your meat?

Hi
by dry the meat I dont mean dehydrate. I got some grass-fed beef stew from whole foods the other day and found that the outside of it was dry but I liked it a lot. Anyone know how to do this efficiently? I tried my dehydrator for 20 minutes but it wasnt the same.

Deal me in, I'd like to know too.

The first thing that comes to mind is to get a box, cut a hole in it and put a small low wattage motor like a computer fan in it on one side say down low, then cut a hole on the opposite side say up high and put a screen like screen door material over the hole and just let it run for a few days to see what happens. Maybe try it as an exhaust fan or an inlet fan.

Hang the thin sliced meat from a string maybe?

I talked to a butcher who said that the fridge where they put beef in to age is just a low humidity room. So maybe using some sort of dehumidifier in the room might be the answer.

Any other ideas?

I had some dried jerky yesterday when out rock climbing. Wow!
