Subcutaneous fat vs other fat

I plan to order fat from Slanker's which I think is subcutaneous fat. How does this compare to other fat sources and would it be recommended for a fragile digestive system?

Their fat is subcutaneous and is easier to digest than suet. It was also tastier IMO. Unfortunately many others agree so at the time it was harder to get than the suet.
