Here is an interesting video from Gregory Ellis about carbohydrates and glycation. At 5:00 he talks about Methylglyoxal which is formed in the body after digesting carbs. He says that this substance is 20.000 time more powerful as a glycating agent than glucose. That was the missing link I was looking for, as low fat high carb diet gurus always argue that we have sugar in the blood all the time. That's right, but we don't always have this Methylglyoxal in our blood!
