i've finally pulled this out of the freezer. now what? ;D

any preparation ideas?

I start by peeling the skin off. Then, I cut it into halves, front and back.  Front part is very lean and tough.  If you don't want to exercise your jaw muscles then you can grind it.  Back part is very fatty and much softer - enjoy!  Most of them have salivary glands, I eat them too.

I just slice thinly and eat. I don't peel the skin off. It's tough to chew, but when I slice it thin I can chew it well enough to get it down. It has a nice flavor.

I like the fatty back part. I tried slicing the front part very thinly and then pounding it into submission, but the hammer broke. (J/K) I have also tried fermenting the front part in kimchi, but it didn't get chewable after about a month.
