What is your favorite cut of meat to buy?
« on: May 31, 2010, 11:16:54 am »
What are your favorite cuts of cow to buy and why?
Here are mine:
1. Shank bones- I like to bite off the extra meat from the outside and push the marrow out easily when it is slightly softened and enjoy. Good and inexpensive.
2. London broil- Inexpensive with little fat (I buy my fat dirt cheap on the side). Perfect helping for one meal for me.
3. Round steak- I like to buy a 2-3X thick one of these to eat over a couple of days, fairly cheap, and a special prize in the middle for dessert.
Give it to us raw, and wriggling. You keep nasty chips.

Raw marrow. I don't care about what types of raw muscle-meats I buy as they all taste the same to me. Well, that is I deliberately buy the cheapest cuts of raw meats as price is the only criteria I use.

Sirloin - Tbone - Brisket
Fat and tender so my kids can eat them too.

I buy ribs and tongue because my wife likes them cooked.

I mostly get chuck from the farms or ordering. If I'm buying from the store sometimes I'll get shanks as they include some nice marrow. I've tried some of the more expensive cuts though. Sandwich steak was good in that it was so airy and easy to eat. So far my favorite meat is goat meat.

wow, goat meat.  The goats I get are too lean.  Are your goats fat or do you mix fat with them?

So far I've just tried the chuck steaks that I've ordered a few times now. I would say its pretty comparable to the beef chuck from the same farm, perhaps leaner. I pretty much always combine with some kind of fat, and am sort of half-ass putting effort into eating a larger %. I tried to get goat tongue but they never sent it.
