What type of fat breaks apart when you chew it?

I hate the chewy fat.  I have been eating suet but the type of fat I really prefer is the type that you find on the side of some steaks that breaks apart easily when you chew it.  The texture and taste is perfect.  None of my steaks are labeled so I don't know what cuts have this fat.  Is back fat like this?
