how long does raw beef fat last out of the fridge? I am thinking of the post-apocalypse(post NWO takeover).

Depends. I have seen dried out raw suet last forever outside the fridge(well, several months before I ate it all). Raw marrow deteriorates very fast indeed, especially the soft, creamy kind.

My friend from Tibet says that it tastes better when it turns blue. They had no fridges.
