I bought a piece of very fresh meat yesterday and have been eating it(chuck steak)... its extremely tough and hard to chew.  The taste is very fresh and the fat is nice and wet.  I hate it.  I'm gonna age the meat another 5 or 6 days then eat it.  From reading these forums it seems normal that sellers hang them for a while before they sell them to make them softer and easier to eat(while the bacteria breaks down the meat). IMO it loses very little nutrition up until a month as long as it doesn't dry out.  It seems logical, you have the meat in a glass jar/container, where can the nutrition go?

Your body is finally getting what it wants and needs.  Good job.  As far as concentrating I've noticed my ability to concentrate on one task at a time is much easier.  When I'm sitting in class I don't daydream anymore... Being on the carbohydrate SAD diet made me tired, bored, and more hungry.  Those were the only feelings I had.  I can credit better concentration to the elimination of carbs and replacement of raw meats/fats.  Have you noticed any improvements with your ADD? or focus/concentration in general?

About a month after I started raw paleo spent about a week with diahrea and indigestion.  By the end of the week all I could eat was jello.  Lost 5 pounds in the process.  After the discomfort was over I returned to my diet and everything was fine got my weight back in 3 days... be it an infection or detox its long over now. So I would try to keep with your diet now that you're feeing better.  Good luck

300 grams is not a lot.  I don't see how you would grow with 150 grams without eating carbs.  If you eat carbs, it's protein sparing and all of the protein can go to building structures.  If you're low carbing, most of that protein will be used for energy.  The body doesn't store carbs for long term.  It has to store protein and fat for the long term.  No protein, no glucose, no immunity, etc.  That's why being muscular is better for long term health.  You don't live too long emaciated without muscles, look at all those starving skinnies in Africa.  In order to store protein, you have to eat it in excess.  Why do you think women respond to muscular men?  They're suppose to, just like men respond to a woman's chest.  It's all instinct.  If you're only eating 150 grams, you'll maintain, but won't grow.  Fat does not turn into muscle, protein does.  There's no nitrogen in fat.  You don't have to eat 300 everyday, but you do at some point if you want to increase your protein stores aka muscles.  How do you expect to grow without eating protein?  That's like 95% of the people in the gym, believing that working out makes your muscles bigger.  365 days a year and still look the same.  Those muscles need molecules from somewhere, it just doesn't come from outer space or another dimension.  Or the other way around, cardio all year round and still look fat and sloppy.  Women always compliment me on how great my skin is, I tell them I eat a lot of meat and fat, and they'll just say it's my genetics.  It just blows my mind how people don't think diet makes any difference.  We're all here because we understand diet does make a difference. 

I know protein slowly converts to sugar, that's why you should let your liver handle the glucose making instead of eating carbs.  To say that excess protein turns into fat, I personally went thru it, I did not gain fat, I gained muscles.  If you can't gain muscles eating that amount of protein, somewhere along the metabolic process, you're missing some vital nutrient or you are already at a genetic setpoint.  Go on any steroid forums, those guys are downing protein levels into the 500g.  If protein were a waste to eat, these muscle heads would not put much emphasis in it.  This should be common knowledge.  You really think ancient samurais and knights trained hard and didn't eat a lot of meat(protein).  The nobles understood this so well that they made laws that forbade the common person to eat meat, so they can have it all for themselves or their armies.  They understood that not allowing the peasants to eat meat would keep them weak and subservient, and besides it's a lot of work back then to raise animals.  Can't go passing around the good stuff to the "common man". 

Of course you don't want to eat liver all the time.  That's just like eating lean meat all the time.  You shouldn't eat anything all the time, but you have to eat it sometimes.  That just goes back to making sure your diet is balanced.

Yeah, I have the same theory.

I think that rabbit starvation will probably happen a lot faster if you don't eat any carbs either. But I think this forum is a bit crazy on fat tbh, you only need a fair amount of fat. People here make it sounds like you need to be stuffing your face with fat all the time which I think is mostly due to ignorance.

I hunt a lot of wild game, and believe me, fat isn't as abundant as you think. Most of these animals are very very lean.

In my eyes you are right.  I tried eating more fat because I felt it was needed, started to get fevers and indigestion.  I estimate I eat about a handful of animal fat a day and that is more than enough for me.  I'm weighing in at 165lbs.  Fat is not needed in surplus

I'm sure this has already been covered but there is a HUGE difference between grassfed liver and grainfed liver from beef.  I received my first shipment from slankers and ate their beef liver for the first time and my god... it was delicious.  I was under the impression that I was getting frozen grassfed liver from my butcher it turns out that I was  getting grain fed.  I always hated the taste and could not even eat it without chasing it down with water. 

~~differences~~

Grainfed liver:::
-extremely soft and weak, I could poke at it with my finger and it would crumble, kinda like jello or silly puddy
-taste was horrific, extremely dense pungent smelly god aweful crap, very dark in color.  The only reason I choked it down was for the perceived health benefits
-defrosts extremely fast in room temperature

Grassfed liver:::
- very strong and well shaped, the texture resembles a unripe fruit, I actually had to chew this liver and it was hard to cut up with a knife
- taste was mild and even though it was frozen and thawed it tasted very fresh, I did not have to plug my nose and chase it with water this was a huge relief. 
- defrosted at a normal pace similar to muscle meats
-the digestibility was superb probably because I didn't have to drink so much water to kill the taste

I won't ever eat organs from anywhere else but slankers again, unless there is a farm or something close that I could get a fresh constant supply, but I doubt it.  The difference is night and day with liver.  Liver is truly a powerful anti-fatigue food just like the weston price website says....  Now go eat a liver

seems that thawing enzymes activates their activity again, and slows or speeds up the rate depending on the organ.  Enough info for me to keep eating frozen thawed meat and organs

Abstract
To determine whether episodes of natural freezing and thawing altered the metabolic makeup of wood frog (Rana sylvatica) organs, the maximal activities of 28 enzymes of intermediary metabolism were assessed in six organs (brain, heart, kidney, liver, skeletal muscle, gut) of control (5°C acclimated), frozen (24 h at ?3°C), and thawed (24 h back at 5°C) frogs. The enzymes assessed represented pathways including glycolysis, gluconeo-genesis, amino acid metabolism, fatty acid metabolism, the TCA cycle, and adenylate metabolism. Organ-specific responses seen included (a) the number of enzymes affected by freeze-thaw (1 in gut ranging to 17 in heart), (b) the magnitude and direction of response (most often enzyme activities decreased during freezing and rebounded with thawing but, liver showed freeze-specific increases in several enzymes), and (c) the response to freezing versus thawing (enzyme activities in gut and kidney changed during freezing, whereas most enzymes in skeletal muscle responded to thawing). Overall, the data show that freeze-thaw implements selected changes to the maximal activities of various enzymes of intermediary metabolism and that these may aid organ-specific responses that alter fuel use during freeze-thaw, support cryoprotectant metabolism, and aid organ endurance of freeze-induced ischemia.

Glad to hear its working out for you.  I'm currently switching my previous diet over to mostly organs and suet with less muscle meat and much less fruits.  I will be writing an update to let you guys know how much more muscle I put on.

None!  You will gain strength.  Your muscles might lose water and glycogen but thats cosmetic and shouldn't affect strength.  I made a post about a month ago where I mention that I gained a massive amount of strength when switching over to raw paleo.  Another thing I noticed is as my muscles lost water and glycogen my veins became far more visible vascularity wise.  It looks great.  You're in for one hell of a ride!

Agreed.  Intense cardio isn't the way to go to build strength and muscle. Emphasize recovery.

You should try it and see how it works for you.  You never know until you try right?  personally I don't think you need to do this program as any strength program will probably work for you.  I'm a firm believer in changing your program quite frequently as well.  As long as you are stimulating your muscles with heavy weights or bodyweight and changing your program frequently you will gain strength and make progress.  Please let us know what you decide to do and your results

I'm in the same situation as you.  I can get fresh muscle meats(grassfed) but only frozen organs.  Frozen liver, heart, pancreas, and I just recently ordered 40 lbs of suet(dont know what the hell I'm going to do with all that yet lol). My butcher provides all of this.  It's worked out great so far.  I really wouldn't worry if I were you about eating thawed organs.  Of course get them fresh when you can but from my experience and the posts of everyone on here eating frozen thawed meat is just not that big of a deal.

I am currently sitting here eating thawed grassfed beef pancreas(sweetbreads).  2 pounds to be exact. I wasn't going to eat all of this but I accidentally thawed it all so I'm gonna spend the next 2 hours eating it.  Been an hour since I've started eating it, I feel fine.  If I have any problems you can bet your ass I'll report them here immediately.

What is your BMI? How much BF% do you estimate that you have?  It might not be the right time yet to work on abs depending on how lean you are.  Like any other muscle it needs intense stimulation, so you must give it a reason to grow.  I recommend weighted crunches and cable pulldowns, use as much weight as you possible can.  I would even strongly recommend squats due to the core muscles they stimulate.

Been eating it for a month.  This is by far the worst tasting food to me.  I cut up frozen liver into small pieces, let it slightly defrost, put the small pieces in my mouth and down it with water.  I never chew the stuff it would kill me.  It digests fine I still get the benefits.  Feels like natures energy drink.  Raw Liver!

The reason I'm not doing cardio is because doing deadlifts and squats are so taxing on the body that I need all the recovery I can get.  Since adding pounds is my goal (as much muscle as possible but I wouldn't mind a 1:1 ratio of fat muscle) I cut out the cardio it seems to just stress me out more.  Let me know if you obtain some gains from resting more, I would recommend at least 5 days off from everything.  But if you must then continue the cardio but I don't believe that your body needs exercise everyday, take a rest.  Try weighing yourself before and after 5 days.  Look forward to hearing
