Difference??? High Meat vs Fermented Fish (asian style)

Please clarify to me: What are the differences in the following methods.

High Meat  vs  Fermented Fish  vs  Aged Meat (air)  vs Aged Meat (vacuum)

I have discovered Fermented Fish in the local asian shop. What is about the health benefits of Fermented Fish? Does it contains same useful bacterias as high meat contains?

Do you know what country the fish is from, and how it is fermented (with salt, sauce?). Maybe the name of the fish in the original language would help. Also, how is it packaged (in a can, jar, no packaging?) If you can ask someone in the store, this might help. Sometimes here in California, the store employees cannot answer questions well, but the shoppers can tell you all sorts of information.

I consider all fermented food good, unless it disagrees with me. Of course, if I found fermented fish, I would find out if it is raw (uncooked, unpasteurized), then buy some and eat it, after asking how to serve it.
