General Discussion / Food Safety Issue
« on: October 27, 2010, 11:34:05 am »
I have two sides of beef in my chest freezer in my basement. Over the past 1-2 weeks, there was a freezer failure, and some of the meat thawed. I am not sure how long it has been thawed, but I suspect under 2 weeks. It was still cold, as most of the meat was still frozen solid, and most of the thawing meat was semi frozen. All meat was vacuum packed and flash frozen when butchered. In a panic, and in an attempt to save my meat, I ran out and got another freezer, and moved a bunch of meat to my freezer in my fridge. I am not sure which of the meat has been previously thawed at this point.

So, any thoughts on eating this meat at this point? Any fear about the food becoming tainted? Any thoughts of identifying meat that should be avoided?

All meat was from a pastured, grass fed, hormone/antibiotic free cow.

I just got this cow a month ago, and have just finished last year's side of beef, so I have not yet had any of it. I'd hate to lose it. It is a lot of meat (including organs) and was a decent amount of money.

Why the fear over:

1) "I am opposed to vaccines for philosophical, ethical, or religious reasons."

I chose this to avoid a mandatory vaccine when returning to graduate school. People don't like confrontation. No one will question this. At least that is true where I live.

If you're going to freeze it you probably want it pre-frozen. Ask if the flash freeze. If they do, this is less damaging than freezing it yourself.

Carnivorous / Zero Carb Approach / Re: some questions about rzc/keto
« on: October 10, 2010, 12:00:32 pm »
yeah you either have to go keto or keep yourself supplied with enough carbs, you sound like you're hanging in between which is bad...

btw, I'm feeling a lot better already... I feel like I might have already completed the switch to keto(only 9 days lol)... I'll update in a couple days ^_^

Actually I am in ketosis. I test with ketostix daily. Have been there for weeks. It is definitely dairy sapping me of energy. I am staying away from too many carbs, the only real carb source in my diet is nuts/pumpkin seeds, and I don't eat enough of them to go over 75g or carbs in a day.

I wish I could just get these fattier meats as Tyler suggests, but it is really hard for me to find grass fed anything around here except to buy my beef by the side. So, until I go through this side of beef (though I do have the organs this time, I should pull them out of the chest freezer) I need supplemental fat. When I finish it off, I am going to go the slanker route a la Lex.

In fact, I am selling off the more desirable cuts of meat to friends and coworkers (desirable by their cooked steak standards) to get through it faster.

I'm trying to get raw VLC as well, and struggling getting there. I can only eat so much muscle meat before I get too much protein, and I am not doing so well on getting more calories from raw animal fat. I am Raw VLC + dairy and non-raw nuts. The dairy isn't that great for me, but the butter and cheese seem to be better than the heavy cream. It is hard to get a steady supply of raw butter though.

When I stay away from the dairy I feel great until I start getting calorie deprived again and head for these other foods.

I agree with Lex. I am highly skilled in my field (PhD) and earn a good living, but I got there late in life. I got my first professional job at 38 years old. Finishing that degree in my late 30s opened up a lot of doors for me. I wish I had done it sooner.

As for being highly paid, I earn in the neighborhood that Lex is talking about, and I will be the first to tell you, money does not buy happiness. It can't be a decision just about the money. However, there is a level of anxiety and misery that having a certain level of income alleviates, and this amount of money changes a lot in life. In my 30s I was making 30k. When back to school and tripled it. I can tell you, $30k was comfortable at 25 years old, but as you start getting older and understanding the volatility of life that you may face, you realize that living pay check to pay check is more stressful than you thought when you were younger.

If you are not leaving school for a startup venture that you really believe in, and you're just going to get a job and get by, suck it up and plug away. Get your ticket punched. You will definitely appreciate the opportunities it allows.

Many of my frineds are in the same boat as me. There is a large number of late blooming very smart and clever people I grew up with and we're all just hitting our stride now in our late 30s and early 40s, and we all feel the same way: should have done this earlier.

Well, I need to get calories somewhere. I can't eat too much protein, as it is not a good idea. This means eat more carbs or eat more fat. Since I am trying to lose weight and recover from adrenal related issues, I chose for a low carb approach. This means I need more calories form fat. I am getting enough protein. My body seems pretty good at regulating protein needs, but not very good at handling raw fat yet. I am still craving raw fruits and veggies. I know these keep me from attaining a healthy weight, as I was raw omni with a lot of fruit and veggie for a year before trying to get to raw paleo.

Hopefully I'll acclimate to raw fat sooner than later.

I agree the microwave function is bad. But a convection oven using a radiating heat element is not so bad. It was the cheapest small convection oven I could find, and it warms the fats nicely.

Depending on your interests in earning a living, college, or even graduate school, can open a lot of doors. The social networking makes for good opportunities as well. You don't have to be the best student in the world to benefit from what college offers. Jump through the hoops, get your ticket punched, and while you're there, learn in spite of the curriculum. The more options you have the more protected you are intterms of security for yourself and family.

OK, I am still struggling to get raw animal fat in me. I just don't enjoy the raw back fat I have, nor do I find it satisfying. As a result, I am finding myself drawn to nuts and cheese to get enough calories/fat. Argh. I keep making myself eat the back fat several times per week to try to develop a taste for it. I hop I get there...

Raw meat is a breeze. I tried grinding some raw steaks and raw backfat together. It was disgusting. So I cooked it rather than throw it out, and it was delicious. I don't want to start cooking as a rule, but am I better off getting raw animal fat that has been cooked over eating nuts and cheese (neither of which are available raw near me)?

I warm my back fat, not my meat. I use a microwave/convection oven. I can set the oven for 100 degrees in convection mode, and it warms the fat to about body temperature.

General Discussion / Re: Constipation
« on: October 04, 2010, 04:34:37 am »
I am having bowel movements every 3-4 days, but they are actually unpleasant. It is not constipation, but the initial movement is fine, then there are 2-3 movements over a 15-20 minute period, each one smaller and more unpleasant than the last. I hope you are right that this will normalize in time. When I was eating mostly raw plant food, my bowel movements were big and daily, but fast and effortless. I miss that.

Omnivorous Raw Paleo Diet / Re: Melons
« on: September 28, 2010, 09:10:51 pm »
I love melons of all kinds, but find that they are too intensively farmed so lack taste. I occasionalyl get really high-quality melons and the taste is so much better, it's amazing.

* Posts on fruit should really be put in the Raw Omnivore forum, as the General Discussions forum gets too many posts anyway. I'll move it there now.*

I agree with this. Supermarket watermelons and cantaloupes are often flavorless around here. My parents have a CSA that does organic seeded watermelons and they are amazing. Getting a watermelon with seeds is nigh impossible here.

What is the difference between ketonemia and ketonuria? And if one is interested in losing excess body fat, is ketonuria (which I assume is presence of ketones in the urine, and indicated with ketostix) an adequate scenario on its own for fat loss, or is it possible to have achieved this state and still not be losing fat from the body?

I ask because I am eating low carb (<100g/day) and am interested in primarily regaining my health, but secondarily losing excess body fat. If further carb restriction might help lose the weight faster, I might be interested. I should do the experiment on myself to know for sure, but what is the theory here?

Welcome!

Also, I don't think "crisps" is us slang.

Chips are what we call packaged thin sliced potatoes, often flavored. i.e. Pringles or Ruffles.
French fries are what we call the things you brits eat with fish (that I thought you called chips) I think. We would get them at McDonalds as an example.

You can get the back fat from http://www.northstarbison.com/

I can't seem to be as enthusiastic about it. I eat it straight, but can only eat about 60g per day. I bought a meat grinder to try grinding it into my grass fed beef. I went too far. Too much fat compared to beef. I just couldn't get it down. I cooked it lightly, and it made all the difference. This is disappointing, as I want to eat it raw. I will try grinding less fat next time and see how much I can go before it gets unpalatable.

It is better if I warm it to 100 degrees in the convection oven. I figure i just need to keep at it, and hopefully acquire the taste.

And, you would get diarrhea for 4 days in a row after eating a little grain?  Even after fasting for a day and a half and then drink some probiotic raw milk and eating probiotic raw butter?

No, this is way more extreme. My reaction is intense lower stomach pain several hours after eating grain, which takes several hours to pass. Followed by intermittent diarrhea for about 8 hours.

How often do you eat grains. This was what it was like for me when I would eat a grain product after being grain free for a while. It took a few of these experiences (and they worsened each time for mew) before I was totally 100% grain free.

hehe. Well yo can eat the stuff raw, but the taste is not really all that. B&J? Ben and Jerry's!. Their icecream is divine. Ofcourse you well get bloated by all the sugar and crash badly...but it's worth it!  :D

I used to believe this. Ice cream was one of the most difficult foods to get away from for me. After years of trying, I think I have finally reached the point where it isn't worth it.

However, this is even more delicious to me:

1 pint raw heavy cream
1 heaping TBSP raw cacao powder
1 TBSP raw unfiltered honey
2 raw egg yolks

Blend and chill. It is like a chocolate-honey milk shake. Might even freeze in an ice cream maker. Kills my cravings for ice cream, fills me up, and doesn't leave me craving more sweets. No bloating no crash.

Exercise / Bodybuilding / Re: What is the concensus on the Sauna?
« on: September 16, 2010, 05:52:16 am »
My sauna is in my basement, and I have a walk out. This winter, I could conceivably jump in the snow after/during the sauna. I'm not sure how I feel about this yet, I am a little hesitant, but I may do it.

most days I eat less than a pound of beef for lunch. Keep in mind this is fatty grass fed beef, so it is probably only 88g of protein.  Since I estimate my lean body weight at about 165 pounds, I don't think this is too much, and I don;t eat that much daily, just when I feel I need it. Some days it is half a pound or 2/3.  I am getting better at listening to my body for its demands.

I have not yet had most of the fat sources I listed. I am eating bison back fat as my prime source right now and I would say it is edible. Then again, I like the muscle meats. I have problems if I eat too much, and have learned I need to eat the fat by itself at a meal, and only until it starts tasting bad. I am eating about 60g per day using this method. Much less than the first few servings I tried.

I am picking up a side of beef this week from my farmer, and will be getting all the organs, fat trimming and suet this year, so I look forward to experimenting with them. I also have gotten some marrow bones recently, but have not yet started eating the marrow.

OK, the kidney stone was either a false scare, or I successfully dissolved it drinking the unfiltered raw cider vinegar. Either way, it only hurt for part of the path a stone typically travels when I pass them.

I am getting better at staying raw, and staying low carb at this point after falling off the wagon a little at a labor day picnic with all kinds of yummy foods from my childhood. I just couldn't say no to all of it. I managed to keep myself restrained though, and didn't go crazy. I also had my burgers cooked 20 seconds per side on the grill so they were mostly raw.

I did have a hotdog, some potato salad and some baked beans though. ANd a little ice cream for dessert.

Back on my trying to get onto my meal plan, I am still eating bits and pieces form my farm share, mostly raw. I sautéed some onions last weekend and had them with some lightly cooked eggs as a treat. Beyond that, I am keeping at the raw and at the low carb (<100g/day).

I would say I am at least 90% raw by calorie at this point.

Getting better at getting more animal fat in. I have learned I can't eat much at one sitting yet. That is my problem. I eat it at breakfast (bison back fat) until it no longer tastes good. Then I have some more at lunch, or not depending on how I feel and what I crave.

Drinking a lot more water again (about a gallon/day) as I am really living in fear of the return of kidney stones. I can tell I'm inadequately hydrated as I am having allergy symptoms, and these go away when I am hydrated. I am also starting to notice I am needing more salt. Woke up with leg cramps last night. They were mild, but it is a clear indicator.

Anyone reading this have any thoughts of getting good potassium while trying to stay low carb?

When I was on city water, I had a shower filter. I used Aquasana brand (google them, I am not affiliated) and was amazed at how much less my skin was dried out.

Now I have well water filtered where it comes into the house, so no shower specific filter.

As for saunas, I have an infrared sauna, had it for less than a month. So far, I have noticed: softer skin, skin blemishes healing and reducing, lower body odor (I can shower without soap without needing deodorant and feel/smell cleaner). I got it at the recommendation of my naturopath for detoxification. I was heavily medicated for decades, and ate terribly during that time as well. I am hoping that it will assist in detoxing faster than a clean diet alone. I am doing 30 minuted about 6 days per week. I really do feel quite relaxed afterwards. In fact I am going to heat it up after posting this.

24
Eat some marrow, suet, fat trimmings, back fat, etc.

I start the day these days with a breakfast of about 60g of bison backfat. Usually keeps me satisfied until lunch of fatty ground grass-fed beef (about half a pound to a pound), and then a third meal based on desire or cravings ranging from more meat, more fat, or a few low carb veggies or a little fruit.

I agree, I wasn't trying to freak out just saying that raw-paleo should make us strong enough to handle some cooked food once in a while no :P

That is my goal, but right now, I am coming to raw paleo with a long history of unwellness. I am trying to maximize my healing, and just looking for some advice on better choices. Dinner was easy at day one of that 2 day meeting. 2 lobsters and 2 plateloads of steamed clams and mussles. Skip the potato and corn. Breakfast and lunch were tougher. Though I agree with not wanting to be a DR-like zealot, I also want to recover form my poor health as rapidly as possible.
